How do we respond to various efforts to
change our eating habits? A review of
nearly one hundred studies about
improving food choices suggests just a
nudge toward healthy eating gets best
results. Different methods included more
specific nutritional labeling on food
packages and menus, making it easier to
make good choices by convenience
packaging and more attractive packaging
and placement of healthy foods. The
different categories appeal to people in
different ways, but the review by French
researchers in the journal Marketing
Science says behavioral-oriented nudges
work best. Specifically, size
enhancements to change the portions of
meals so there are more healthy foods
and less of those considered unhealthy.
